Why are some prawns mushy ? floury when cooked and others are not?
Watch cooking times carefully. It’s easy to overcook shrimp, making them dry and rubbery. Shrimp should turn pink and be slightly firm but still have a little give to the meat. If they’re totally firm, they’re overcooked. Going backwards from this statement, the more undercooked they are, the mushier they will be.
