What are some good vegetarian lunch ideas for school lunches?

If you have cold enough ice packs then get some green peppers, they are awesome. Humus and chips? Peanut butter and honey of fluff (You know what fluff is right?) sandwhich

Grilled cheese with tomato.

Spinach and strawberry salad. Ingredients 2 bunches spinach, rinsed and torn into bite-size pieces 4 cups sliced strawberries 1/2 cup vegetable oil 1/4 cup white wine vinegar 1/2 cup white sugar 1/4 teaspoon paprika 2 tablespoons sesame seeds 1 tablespoon poppy seeds Directions In a large bowl, toss together the spinach and strawberries. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Eggplant Sandwhiches

Ingredients 1 small eggplant, halved and sliced 1 tablespoon olive oil, or as needed 1/4 cup mayonnaise 2 cloves garlic, minced 2 (6 inch) French sandwich rolls 1 small tomato, sliced 1/2 cup crumbled feta cheese 1/4 cup chopped fresh basil leaves Directions Preheat your oven’s broiler. Brush eggplant slices with olive oil, and place them on a baking sheet or broiling pan. Place the pan about 6 inches from the heat source. Cook under the broiler for 10 minutes, or until tender and toasted. Split the French rolls lengthwise, and toast. In a cup or small bowl, stir together the mayonnaise and garlic. Spread this mixture on the toasted bread. Fill the rolls with eggplant slices, tomato, feta cheese and basil leaves.

Cucumber Sandwiches Ingredients 1 (8 ounce) package cream cheese, softened 1/2 cup mayonnaise 1 (.7 ounce) package dry Italian salad dressing mix 2 loaves French bread, cut into 1 inch slices 2 medium cucumbers, sliced 1 pinch dried dill weed Directions In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight. Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!
