Gluten here, gluten there, gluten everywhere!

I have decided to go on a gluten free diet but after being aware of this I see gluten virtually everywhere. I realize that going on this diet you have to take an extra step or so to stay away from it completely. does anyone here on the gluten free diet feel the same way?

There are some cookbooks that you can get to help you. I just got one because my oldest son has ADHD and gluten is supposed to aggravate the symptoms. The cookbook came from The Lakeside Collection and it’s for a totally gluten and casein free diet. It’s called “The Kid Friendly ADHD & Autism Cookbook”.

It tells what kinds of flour you can use and what foods to avoid. It has a lot of really good recipes in it…including chocolate chip cookies. I can tell you that one of the easiest things to do is replace all purpose flour with white rice flour, potato starch flour, and tapioca flour. You can use this mixture in any recipe that calls for all purpose flour. The taste of the food barely changes. Since my son has been on this diet his ADHD symptoms have almost gone away.

It’s a good diet to go on although it’s hard to get started but once you’re used to it the benefits are great.

My dad and little brother have Celiac’s Disease (they’re allergic to gluten) –anything with wheat, basically. If they do eat it, they break out in these really painful sores and get really bad stomach aches. It’s crazy how much food has gluten in it. Their dietitian said Mexican food is the best to eat. (besides flour tortillas.) :)
