another cake that is interesting and taste great is earthquake cake..heres how to make it
take a cup of flaked coconut and a cup of chopped pecans and layer it at the bottom of the greased pan..then take a box of german chocolate cake mix and mix it according to the directions on the box and then pour it over the coconut and pecans.. take a package of cream cheese, 4 cups powdered sugar, 1/2 cup of butter, and a teaspoon of vanilla extract and mix together until smooth..and then either pour it over top of the cake mix..or drop it in random spots by little spoon fulls.. bake it for 30 minutes at 350 degrees...
i made this for a contest and won 2nd place =]
Unique is difficult. Most people - especially kids - do like tastes that they are somehow used to. Not unique tastes.

I do love making cakes with buttermilk, cream cheese and peaches.
Not particularly exotic but my favorite is citrus (lemon or orange) cakes. Last cake I baked was chocolate and raspberry. I thought it was yummy but the rest of my family thought it was weird.
I tried a tropical cake at a wedding it had kiwi,bananas,strawberries,and pineapple and bunches of fruits and it was very creamy ...It was a great cake!(:
Hm... how bout a yeast-dough bottom filled with vanilla cream and covered with candied almonds? Or maybe chili chocolate muffins?

i like carrot cake..but its not THAT unique though....lol but still so yummy
