How do you soften cream cheese for baking and mixing?

I’ve tried leaving it out of the fridge for a while but it’s still always too hard for my mixer. Two of our mixers burnt out from trying to mix it.

Try the microwave at the lowest power level and just keep checking it. I use power level one to make cheese out of the fridge more “room temperature” and I use the same power level to make butter from the fridge more spreadable. I’m thinking a package of cream cheese might need power level 2 for 1 minute but test it!

You need to leave it out to room temp to make it soft. Put it in sunlight or somewhere warm like near a stove. I wouldn’t micvrowave it because using that much heat at one time can make it taste sour.

Stick it in the microwave & check it like every 5 or 6 seconds, i do this with butter. Just DONT let it melt or get close. Its not the same and will totally change whatever it is your making. Atleast it did for me. Mext time just take it out like 2 hrs early and let it sit on the counter though so it can get rooom temp.

If you chop it into small cubes, your mixer will have an easier time breaking it down.
