Why do my kitten's backs arch when they fight?

Because when they arch their back they transfer the power they build up in their legs when pounce on a target

Back arching to kitten fights is like trash talking to chick fights. Chicks as it…bitches, not chickens.

It is an instinctive reaction to threat, fright, or aggression - including the practice aggression of play. The back arching (and their fur standing up at the same time) makes them look more intimidating to the opponent. As bublondee says, it is a type of trash talk in the cat world.
