Answer #4

I make mine differently! depends on the type of meat you want… you can use…

  1. turkey
  2. chicken
  3. beef 4.beef + chicken(50/50) 5.beef + turkey(50/50) After you have chose what you want to use as your base simply make sure they are already ground & set aside.
  4. Now you will need 3 onions(spanish or yellow) chopped into quarters & set aside.
  5. 3 cloves of garlic whole & set aside
  6. a good bunch of Chinese parsley(remove the stems only need the leaves) wash well & set aside.
  7. 3-4 slices of wet rye bread(soak briefly but do not drench) & set aside. Now while using a meat grinder, add a bit of the meat base & add some onion, parsley, bread(not soaked squeeze any excess water) & 1 clove of garlic as it grinds it altogether. once you have done all of that it is time to add the finishing touches to make it tasty & actually hold together. Now You will need your favorite seasonings…some use merely salt, pepper & maybe some other ingredients. {For some that like that Mid Eastern flavor, I would add cumin, turmeric, black pepper & some dry cilantro seeds which have been crushed into a powdery substance} add 2 eggs to hold together. (if it is runny add some regular flavored bread crumbs…it should be just fine & no need for it but in case it is…) Now that is all there just mix it well & begin to form your meatballs according to your desire.

**Btw, this can be used to make kabob’s on sticks as well.

Good luck, hope you like it.

I have the best Italian meatball recipe. My friend who is doing a course to become a chef emailed me this recipe, because she knows how much I love meatballs. So here it goes: Ingredients:

  • 500g of minced beef.
  • 3 cloves of garlic
  • 2 handfulls of breadcrumbs or oats (I use oats)
  • 4 tbsp chopped salami
  • 3 tbsp grated pecorino cheese
  • 2 sage leaves, chopped
  • 2 basil leaves, chopped
  • 1 stalk of flat leaf parsley
  • 1 egg
  • 1 onion grated or chopped very finely
  • tbsp of olive oil
  • Season with salt and pepper to taste

Combine all the ingredients in a bowl. Then roll into balls. Place in non-stick cast iron pot, cover with lid, and cook in oven at 200’C for 20-30 mins. Take lid off the last 5 mins of cooking time and let cook uncovered to brown. Serve with spaghetti and a tomato ragu sauce. Sprinkle with parmesan (optional).
