How do I make my black frosting not taste bitter?

YIKES! I just made a whole batch of black frosting for a huge cake this evening. It tastes SO incredibly bitter that its nearly inedible. Does anybody have any tips for making this batch NOT taste bitter? Can I add extra powdered sugar or vanilla or ANYTHING to keep the consistency but get rid of the bitter aftertaste? Please- any suggestions that you have tried and actually work would be greatly appreciated!

Thank you so much! You have saved my cake and my reputation as a start-up baker in my circle of friends/coworkers/ and family. Have a great day!

I would consider this batch lost - there’s so much dye in it that nothing will counteract the bitterness.

You can make a chocolate frosting just like a white one, but add cocoa powder until the flavour is right…you can then add milk (a little at a time) to it to soften it if it’s too stiff.

This is what I do, btw - I’m a pastry chef, lol

Is it possible to combine the mess that I have made with a tub of store bought chocolate frosting? Will that taste horrible? Or should I scrap this completely, go buy some chocolate (I have zero clue how to make chocolate at home…) and then dye that? I’m so glad you’re on here- you should get Butt-Saver of the Year Award. :)

Whenever you make black frosting, you should start with a chocolate frosting so you don’t have to add so much colouring.
