Hydraulics work with the laws of fluid dynamics. Liquid cannot be compressed easily, so if I have a lot of liquid in a large piston and pump it into a smaller piston, I can exert the force of the large piston through the smaller piston with simple displacement and produce extremely effective work output.

Replace the larger piston with an engine driven pump and you have an excavator or back-hoe.
