Answer #3

Extracts work great for flavoring icing, just be sure to only add a few drops at a time, then mix and taste. It doesnt take much to add too much and have it be overpowering. Vanilla, orange, mint, toffee, strawberry, lemon, and pineapple are the flavors i get the most request for. You can also flavor icing using very finely cut up fruit and fruit juice, the bits of color from the fruit and having fresh fruit in your cake look and taste delicious.

Answer #4

Yep, extract is fine. You only need a small amount. If you put in less, the flavor will be subtle, if you put in more, the flavor will be stronger. I can’t really tell you how much to put in as i don’t know how much icing you are making. BUt you only need a very little amount.

Answer #5

Just to add to that, if you wanted a natural orange taste, you can use grated orange peel.
