I think you can. they are pretty edible. I am uncertain about the taste though. You may want to salten it, or boil it first.

Yep, you can eat them (maybe not in quite the same way as you would eat a pickle!). They are mainly used as an ingredient in Chinese soups and stews. The medicinal qualities that they are believed to have would include helping with arthritis and tendonitis and are also used as an aphrodiasic and for male sexual health.
