Not all alloys of stainless steel contains nickel. However, "surgical" stainless steel does have nickel. Stainless steels without nickel look dull so chances are any stainless steel used in jewelery has nickel. Stainless steel forms a very stable outer layer of chromium oxide which is what protects the metal from further oxidation. Depending on your sensitivity to nickel you may be able to get away with wearing stainless steel for short periods of time due to this layer but if you are very allergic to nickel you should avoid stainless entirely.
Stainless steel is stainless because it contains nickel. Only small amounts are in it so you might have to test it out. There are also alternative metals earrings are made out of. Personally, I also think wooden earrings look awesome, but that's just me.
I just put the earrings in, and it doesn't hurt but it hurt to put in. I'm worried though. I'm gonna leave them.. But maybe I should take them out? I don't know.
