Why are some things soluble and others are not?

why are somethings soluble why others arnts and what are somthings that can be soluble in water

Polar means water has a positive and negative charge on each end, like the two sides of a magnet. It likewise dissolves other polar and charged things, like magnets pulling on eachother. For example salt has positively charged sodium and negatively charged chloride, so it dissolves in water. Oil and oil soluble things are not polar - no charges - so water has practically no effect on them.

hydrocarbons are non-polar molecules and water is a polar molecule. The rule of thumb is “like dissolves like.” Therefore polar things are soluble in other polar things, and non-polar things are soluble in other non-polar things, but not the other way.
