An exothermic chemical reaction, which means it realases energy, in this case, is the form of light rather then heat
There is a glass casing inside them and when you ‘snap’ it to start it this allows the chemicals to mix
There is a florescent dye inside which converts the energy to different coloured light. The basic premise of the reaction is that the reaction between the two chemicals releases enough energy to excite the electrons in the fluorescent dye. This causes the electrons to jump to a higher energy level and then fall back down and release light.
