Does anyone have any good tomato canning recipes?

We recently bought a big box of roma tomatoes. We gave a lot away, but we still have a huge amount and we’re not sure what to do with them. We were thinking that maybe canning would be good, but I’m open to other ideas if anyone has them. If you could include a good recipe, that would be very helpful.

My Mom and Dad can tomatoes all the time during the summer the recipe they use is as follows:

2 1/2 or 3 1/2 pound of tomatoes per quart Bottled lemon juice Salt (optional)

Step 1. Blanch tomatoes 30 to 60 seconds or until skins start to crack dip immediately into cold water.

  1. Slip off skin, trim away green areas, cut or core. cut in halves or quarters or leave whole. 3.add 1 tablespoon bottled lemon juice to each pint jar ( 2 tablespoons to each quart jar) 4.pack tomatoes into hot jars, pressing gently on tomatoes until the natural juice fills the spaces between tomatoes leaving 1/2 inch for headspace.
  2. Add 1/2 teaspoon per pint jar.
  3. Process pints and quarts 1 hour and 25 minutes in a boiling water canner.

I also have a recipe for salsa if you would want that as well.

Im sorry it took me so long i was out of town. This recipe nothing is really exact its more of a put what you want in it.

2 ice cream pails of tomatoes ( measure after being skinned and quarter) 1 large onion diced 2T salt to cover tomatoes, 1 rid of celery chopped 1 large green pepper 2 yellow banana peppers 5 Cayenne peppers or to taste 1 T of lemon juice 1 T of vinegar 1/4 tsp. sugar 24 oz of tomato paste 1 garlic clove Peel and quarter tomatoes. slice onion and mix with tomatoes and sprinkle with salt. let stand overnight at room temp. In the morning Put the tomatoes in a blender of a quick mix to break up the chunks. And the rest of the vegetables lemon juice vinegar sugar tomato paste and garlic. Bring to a boil. The recipe says to pour into jars seal and hot pack in canner for 10 min, but my mom just boils for 20 min and heats the lids and seal.
