Is there anything I can substitute for coconut oil?

The recipe I need it for is key lime pie, it’s supposed to harden in the fridge and stabilize the recipe. I can’t find it in my local grocery store.

You might try canola or corn oil…….

No good substitute, sorry. Try looking for it in different kinds of stores, like a health food store, ethnic grocery store, large drug store, Walmart, etc. Virgin coconut oil is best.

You could try palm oil, though some is reddish, which might affect the characteristic greenish color of a key lime pie. You could also try butter or ghee (clarified butter).

All of these are very high in saturated fats, which is what makes them work as you describe, but also means it’s not good to eat very much of them.

Those are not substitutes for coconut oil. In fact, they are not even recommended for healthful cooking, except for some kinds of canola oil.
