Ingredients 1 lb gooseberries, washed 1 and1/2 cup sugar 1 and1/2 cup 35% whipping cream Directions -Simmer the gooseberries with 2 tbsp water and 2 tbsp of sugar until they are soft enough to mash

  • Mash and add the remaining sugar
  • Cook out until the purée is soft but thick (a couple of minutes)
  • Add 2 tablespoons of ice water to the whipping cream and whisk it until you have soft peaks
  • Place the whipping cream in a bowl and fold in the gooseberry purée
