Baking pies do's and don'ts

im just curious what are things you should do and the things you shouldn’t in baking pies in the oven.

Don’t use an easybake oven no matter what… A 60 watt lightbulb is a terrible conductor of heat when baking pies. :-)

But seriously, can you be more specific? In the meantime, here’s two tips… 1) Beat an egg and brush it on the crust to give it a nice little shine. 2) Be sure the rack you’re baking on is in the center of your oven.

Start at a higher temp (425) and drop it down to about 350 after 15 minutes.

Don’t put a hot filling in a raw crust, as it will cause sogginess.

Avoid overworking the dough, because it will make your crust shrink when it bakes.
