Cling refers to clingstone. The “stone” of a peach is another name for its pit. In clingstone peaches the flesh of the peach is strongly attached to the pit. In freestone peaches the flesh is easily removed from the pit. Clingstone peaches tend to be firmer, less juicy and milder in flavor and are preferred for canning where the stone can be cut out. Freestone peaches are better for eating fresh because you don’t have to gnaw the pit to get as much of the flesh as you can. Nectarines also come in clingstone and freestone varieties.
