Any store that sells skis will be able to recommend the length and weight you’ll need / want depending on your skill level.

The other major issue is binding release settings - the more amatuer of a skier that you are, the looser the binding release, so that in the event of a fall (as you’re more likely to) you’ll lose your skies to help prevent injury.

If you are more ‘pro’ then you’ll have a tighter binding setting to ensure that in the rare event of a crash, you don’t lose your skis.

From your question…well, if you want them to “look” the way you want, you might need to special order straight from a manufacturer, but, you might want to first visit a retail shop so you know what settings, size and other stuff you’ll need.
