Why is it that when you chew mint gum and you drink something it is alwayse colder than what it really is.

Well, I’ve never noticed the effect quite so strongly, but what you’re observing is the cooling effect of menthol. It actually took scientists a long time to figure out exactly how it worked, but basically the menthol in the chewing gum triggers the “cool sensors” in your mouth (and on your skin, if you wanted to put chewing gum on your skin.)

When you drink water, you’re washing other chemicals off of those cold-sensing nerves, and the menthol remaining in your mouth snags right onto them and sets them off. (You get similar effects when you drink water after eating other foods, most famously artichokes.)

You must be particularly sensitive to it. It doesn’t actually lower the temperature of anything, but the nerves think that they do, and that’s all that matters.
