Why does Blue cheese have a sell by date, if it already has mould on it?

Is it a specially cultivated type of mould or something?

The mould on Blue cheese is an edible mould…not all moulds are safe to eat and that’s why even Blue cheese expires.

Bleu Cheese has a very specific type of mold on it that gives it it’s unique, tangy flavor.

All dairy products sold in the US, are regulated by the FDA and must have a sell-by date to insure that grocers do not sell food that may have become spoiled or rotten, or that may have picked up a dangerous bacteria that could multiply over time and make you sick.
