Oh, do stop being so silly, people (not ALL of you):

Until around the late 16th century there were no standardized and generally agreed rules for spelling in English, anywhere. (Shakespeare, for example, signed his name in various ways, and just look at the accounts written by the early Pilgrim Fathers.)

By the time people thought about standardizing, different ways of spelling certain words had developed on both sides of the Atlantic.

Many people in the British Isles stayed closer to the original French spellings in words like colour (behaviour, favour, etc), programme, centre/theatre etc - these are words that had come into English from French.

On the other side of the Atlantic, when Noah Webster compiled the first dictionary of the language in America, he decided to simplify things by writing some of these ‘French’ words more phonetically, cutting out the unpronounced letters. It was only a partial reform - have a look at the ideas of G.B. Shaw for a REAL reform - but most of Webster’s ideas caught on in the USA.

Otherwise in the world today, people tend to use British forms in the former British colonies, as well as throughout most of Europe. A few countries that have had more influence (one way or the other) from the USA tend to use US style - Russia and Japan, for example.

Both versions are ‘correct’ and acceptable. The various publishers I work for always specify which standard they want. It’s not a big deal.
