Do both cardio and heavy weight exercises, in rotation and keep up your calorie intake.
You'll need to spend about 2-3 hours in the gym per session (and that's just the conditioning end of things) for the MMA courses, you'll want to spend an additional 2-4 hours per day, six days a week.
don't exercise every day of the week. Six is good.
