An onion is made up of cells, seperated by a membrane. When you chop it, the cells entwine and cause a chemical reaction that makes your eyes watery. Garlic does not have the same chemicals as onions, therefore it does not share the same reaction.

Onion contains alliinase which is broken down during cutting to form sulphenic acid, which evaporates into the air as cells rupture. Garlic, although in the same family as onions, produces a different yet similar sulfur-based compound called Allicin. This compound is closer to an oil, so it doesn’t enter the air as easily.

Best answer, but I’d like to point out that some people who are highly sensitive to onions can also be affected by garlic … I am one of those unfortunate few, and as much as I love garlic, I cry like a blubbering fool when I cut it.
