Why did my olive oil change colour?

So, I bought a bottle of olive oil the other day for cooking, and it was very green in colour, which I found odd, but I didn’t think anything was wrong with it so I bought it anyways. Now, less than a week later, it’s gone it’s normal yellow colour. I have been using it. What caused this?

There’s a Q&A on this site http://funadvice.com/r/14t1nhms10e where the question of colour change is answered, doesn’t talk about such short periods though, but I would guess it’s the same logic.

i never knew olive oil was yellow :O

its usually green in color and shouldnt change at all :S ive had a bottle of extra virgin olive oil for over 4 weeks and it stayed green….

O_o Well…. I don’t know honestly. All olive oil I’ve gotten has been yellow.

Oxidation can cause that…fresh pressed olive oil is naturally green, but the more it’s exposed to the air, the more it lightens to the yellow you’re more familiar with.
