Turkey roasting time.

Why do so many turkey roasting instructions suggest so little time? At Thanksgiving dinner, the turkey is never done on time – recommended 4 - 4.5 hours for a 23 lb. turkey. I would expect the turkey to take almost twice that long at 325 to 350 degrees f.

It depends on whether or not the turkey is stuffed…if it’s hollow, it cooks quicker.

I never put the stuffing inside the turkey. Instead, I wrap in inside tinfoil like little logs and place it beside the turkey in the roaster.
