Hi,

For anyone who doesn’t know, “field dressing” is the act of removing the bird’s major organs right on the field after killing the bird – in case you cannot get to your desired location / refrigerator within an hour.

To field dress a wild turkey, first cut the turkey at the pointy part of the breast. Put just a little pressure on it when cutting so you don’t hit any organs inside (primarily the intestines). Cut the innards (heart, liver and gizzard) at this point, and save them in a bag on ice if you like eating these organs.

Next, remove the “crop” where the neck meets the breastbone on the bird. Cut through the breast at this point, which will remove the bird’s esophagus (note: the esophagus will be hard if the bird recently ate.)

Now, just put the bird on ice until you can get it to a refrigerated (or cooking) location!
