Ribs? Well, what I do is poach them first in a smoke-flavoured brine, then throw them on the grill with some barbecue sauce.

Salt and pepper them (sometimes I use a little garlic salt, too)…put them in the oven covered with aluminum foil, and bake for an hour at 325 dgrees. This will get them mostly cooked and tender. Then using a pastry brush, brush your choice of sauce on them (BBQ, Chinese, whatever)..when the top side is done (bubbley and glazed looking), flip, and brush sauce on the other side, and continue baking. Gotta watch them in this last stage, tho, because the sauce can make them burn easily.
