Would saying "your airways (plural) were constricted" be wrong?

Is “his airways are constricted” or “his ariway is constricted” the right way to say it, or could you say it either way?

Both are quite correct. Choose whichever sounds less cumbersome, whichever one seems to flow.

Correct because you do have more then one airway. The trachea (windpipe) breaks into two. The left main stem bronchus and the right main stem bronchus. Those then break off into many smaller bronchioles.
