What are some good recipes that I could put purple potatoes in?

Yep purple potatoes

Purple potatoes have a medium level starch content, so that means they are pretty resilient and you can use them when making french fries, potato salads, etc (anything that requires the potato to retain its shape)…the down side is they have a very mild flavour, so seasoning is a must…they also tend to be really mushy if you overcook them.

purple mashed potatoes would be pretty cool…

baked potato pie (allways good) bake the potatos then put cheese and spices on it (Delicious)

just do what you would do with any spud…

chop them up, cover them in milk, sprinkle sugar over the top and bake them and just think if you add other stuff to thicken the milk youll also have a sauce :p
