Some people are members of successful groups that strike out on their own. Some, like alkane said, are discovered playing independent gigs singing covers and are signed. Many pop artists, like the boy bands of the early ‘00s, were formed by auditioning unknowns.

Plenty of artists are signed to contracts based on their ability to sing and perform rather than write original music. Record companies employ plenty of songwriters and lyricists to give them material. Just like not every songwriter has singing talent, not every singer has the ability to write music.

So, you can go in to a pub and sing someone elses song and then if you’re lucky you get spotted or you get yourself spotted. I guess they go to agents and people who try and get them record deals and so on.
