Why do bananas turn into liquid if you let them sit out for a long time?

What in them makes them do this?

I have seen they dry, not turn into liquid, like at first they get soft, which taste gross, because of the climate around them? Not sure though.

I think that they would get moldy before they got liquidy, unless you mean that its liquid because of how it was rotting??

They absorb the moisture in the air (like if you put it in a covered container with cake it will dry the cake.) Nats will eat away at it and also it turns to a straight starch almost I believe.
